Making delicious spaghetti with vegetables at home is extremely easy. In fact, there are thousands of different ways to prepare it. Simply sauté the vegetables, cook the spaghetti and add your favourite sauce. To do so, follow these three steps:

Although you can also make this recipe with macarrones or hélices, we specially recommend Gallo’s Classic Pasta range: the classic pasta, made exclusively from milled durum wheat semolina, just the way you like it. Specifically, to make this spaghetti we have selected our spaghetti No. 3 because, given its texture and thin shape, it combines perfectly with sautéed vegetables and absorbs all the flavour of the sauce. To start cooking it, place the spaghetti in a saucepan with boiling water and let it cook for 9 to 10 minutes (depending on what texture you prefer for your pasta, harder or softer).

Step 2: the vegetables

Something important about this recipe is that, probably, it will look different every time you make it because you can use any vegetables. Your choice can be based on what you have at home and, of course, the season of the year. This is our selection:

  • Onion.
  • Green pepper.
  • Red pepper.
  • Courgette.
  • Carrot.
  • Cherry tomatoes.
  • Mushrooms.
  • 1 or 2 garlic cloves.

 

Finely chop all the vegetables, except for the garlic cloves. Heat up a little olive oil in a frying pan and sauté the vegetables over a medium heat following this order: first, the garlic cloves. When the garlic starts to golden, add the chopped onion and let it cook for a while. Then, add the courgette and stir for a couple of minutes. Add the carrot, red and green peppers and sauté for a few more minutes. Finally, add the cherry tomatoes sliced in half and the mushrooms and cook everything together.

The thing we like most about this recipe is how many variations it has. You can make it with different vegetables, as well as with different sauces. Here are our recommendations:

Tomato sauce with parmesan cheese

The classic: tomato sauce with parmesan cheese works perfectly with any pasta. Furthermore, it is the ideal option for children. They’ll love it. Can you think of a better way to get your kids asking for seconds while eating vegetables?
