Ingredients:

  • Half a courgette.
  • Half an aubergine.
  • Half a red pepper.
  • Half a leek.
  • One garlic clove.
  • 250 g of fresh tomato.
  • Extra virgin olive oil.
  • Basil.
  • Oregano.
  • Salt.

Instructions: Peel the garlic clove, the onion and wash the other vegetables thoroughly. Then, thinly slice all the vegetables. Then pour a little olive oil into a frying pan and place it on medium heat. 

First, add the onion and garlic clove and let them cook for about eight minutes. Then, add the leek, red pepper, aubergine and courgette and let them cook for about 5 minutes. Finally, add the tomato, oregano, basil and salt. Cover the pan, reduce the heat and let everything cook for about 20 minutes. Done! You can serve it on your pasta with cheese!
